Good Morning! Connie-Yum Chocolate week! Maybe that's why I woke up yesterday craving chocolate cake! We had a friend of ours visiting us this weekend and we baked yesterday...Chocolate cake!!

Morning Gang! kk- here is what I do when I make to make a Medium (12") Reuben Pizza:
I use my favorite Thin Crust Pizza dough recipe, except I substitute about half of the flour with Rye flour, then while the yeast is proofing I add about a teaspoon of Caraway seeds to the yeast water and sugar. Then just make your crust as usual. Before you are ready to do the to do the toppings, Spread the top of crust with a bit of extra light olive oil or a combination of oil and melted butter then pre-bake the crust in a 400 degree oven for about 8-10 mins. just until it is crusty but not golden brown. (This keeps the crust from getting soggy later) then remove and let cool completely. Meanwhile drain 3/4 - 1 cup Sauerkraut in a strainer, pressing out as much juice as you can. Add Thousand Island dressing for sauce, just enough to make it moist, but not soggy later. I use about a 1/4 to 1/2 a c. for a medium pizza. Then sprinkle 1/2- 1 c.shredded pre-cooked corned beef or pastrami evenly over crust. Top with the sauerkraut and 1/2c each of grated Provalone and Mozzerella cheeses. Bake 10-15 minutes until crust is golden and the cheeses melt and pizza is hot all the way through.
**If you don't want to make your own crust, buy a pre-made or refrigerated crust and just sprinkle the Caraway seeds over the sauce before topping.

Joshmom- Glad to hear that your Mom is doing so good! I know what she means about surgery sometimes. It is scary... but so worth it when the pain is gone!!
Doing the prep work on Corned beef and cabbage this morning, then will slave over the crockpot all day...HA! We love it so much we have it several times a year! Then with left overs I make a Reuben Pizza. It sounds weird but it is sooo yummie!
