LOL! well, guess you would call it a quesadilla? but want something more than a cheese filled tortilla. I also like mushrooms and broccoli in it too.

You know I've come across easy chicken enchilada recipes and well, i have the recipe and then it's lost. That would be great if you would post your recipe Joni, Thanks!

Thanks Joanne.

Joni, the chicken enchiladas sounds delicious!

P'nut & JAM, the thai honey peanut dip is something i would like to try when i warm up a tortilla filled with chicken and shredded cheese.

You should pick up one of those oven thermometers. I've always had one in mine. I have an old range/oven and due for a new one real soon. the oven knob is not working properly so i have to keep a close eye on the oven temp when using the oven.

okay, i just noticed the brownie recipes posted by sharon. actually, i forgot about them. i'll have to try those recipes the next time. i made a box mix batch of brownies the other day. i discovered it tastes much better if you allow it to cool completely and slices better.

P'nut & JAM, I am so glad that your daughter will be closer to home for you.

P'nut & JAM, where is she going for her next duty station? My son has been sent to the Offutt Air Force Base and so far it is going good for him. He hurt his back while in Japan and has started therapy. The doctors at the Air Force Base have told him that he has some muscle problem and have started him on therapy. He has also seen a Nutritionist for some help is losing some additional weight that they hope will help elevate the problem. I will be going up to see him in July and hope that he is doing better by then. We are planning a trip to Mt. Rushmore while I am up there visiting him. His Dad went to see him early in March. I was supposed to go up in March to help him unpack his personal belongings but I fell and broke my left hand and could not go. His Dad went and helped him out. I love the way that you fixed the kinds of food that your daughter probably was not getting on her last duty station. Hope all goes well for her and she is getting something that she really wants to do.
