Salsa Meat Loaf

Aluminum foil strips
Vegetable cooking spray
2 lbs ground round ( I use ground turkey)
3 slices light bread, crumbled ( 1 cup)
1 cup chopped onion (about 1 medium)
1/2 cup fat-free egg substitute
1/4 tsp salt
1/4 tsp ground pepper
1/2 cup ketchup
1/2 cup thick and chunky salsa

Coat 3-1/2 quart slow cooker (mine is a 5 qt) with cooking spray. Tear off two lengths of aluminum foil long enough to fit in bottom of cooker and extend 3 inches over each side of cooker. Fold each foil strip lengthwise to form 2-inch-wide strips. Arrange foil strips in a cross fashion in cooker, pressing strips in bottom of cooker and extending ends over sides of cooker. Combine beef and next 5 ingredients, shape mixture into a loaf the shape of the slow cooker container. Place loaf in slow cooker over foil strips. (Foil strips become "handles" to remove meat loaf from slow cooker.) Make a shallow indention on top of meat loaf. Combine ketchup and salsa (chili sauce), pour over meat loaf. Cover and cook on low heat 8 hours or on high heat 3-1/2 to 4 hours. Use foil strips to lift meat loaf from cooker. Let meat loaf stand 10 minutes before serving.

Mamma Mary

Really easy shredded beef taco meat.

Stew meat covered in water and onion soup mix. Cook on low all day. Drain most (leave a little so it's not dry) of the fluid, mash the meat then add a large jar of mild Herdez salsa. That's it.

Fix-it and Forget-it Cookbook
4 Servings-----Lemon Chicken with Rice

Ingredients

* 4 tablespoons unsalted butter
* 1 onion, finely chopped
* 2 garlic cloves, finely chopped
* 4 boneless chicken breast halves
* Salt and pepper
* 4 cups canned low-sodium chicken broth
* 1/4 cup lemon juice
* 2 cups long-grain rice
* 1/4 cup finely chopped fresh parsley

Preparation

Melt 2 Tbsp. butter in a large skillet over medium high heat. Add onion and cook until softened, stirring occasionally, 4 to 5 minutes. Add garlic and cook 1 minute longer. Scrape into slow cooker.

Sprinkle chicken with salt. Melt remaining 2 Tbsp. butter in skillet over medium high heat until foaming. Add chicken breast halves and cook until browned, about 2 minutes per side. Transfer to slow cooker.

Add 1 cup broth and lemon juice to skillet and bring to a boil, scraping browned bits from bottom of pan. Add to the slow cooker, along with remaining broth, rice and 1 tsp. salt. Stir, cover and cook on low until chicken is cooked through and rice is tender, 2 to 3 hours. Remove chicken, stir parsley into rice and season with salt and pepper. Divide rice onto 4 plates and top each with a piece of chicken; serve immediately.
Crock Pot Banana Bread

Ingredients

1 3/4 C. flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/3 C. shortening
2/3 C. sugar
2 eggs, well beaten
1 1/2 C. well mashed, overripe banana (2 or 3 bananas)
1/2 C. coarsely chopped walnuts (optional)
Directions

Sift together the flour, baking powder, baking soda and salt. With the electric beater on low, fluff the shortening in a small bowl, until soft and creamy. Add the sugar gradually. Beat in the eggs in a slow stream. With a fork, beat in 1/3 of the flour mixture, 1/2 the bananas, another 1/3 of the flour mixture, then the rest of the bananas, and finally the last of the flour mixture. Fold in the walnuts. Turn into a greased and floured baking unit or a 2 1/2 quart mold and cover. Place on a rack in the slow cooker. Cover the cooker, but prop the lid open with a toothpick or a twist of foil to let the excess steam escape. Cook on high for 4 to 6 hours. Cool on a rack for 10 minutes. Serve Warm.
:
Can you substitute butter/margarine for the shortening?
Super Easy Vegetable Beef Soup

2 lbs ground beef (lean)
1 large jug of V8 Juice (46 oz)
1 can beef broth
1 family size bag mixed frozen veggies (peas, carrots & corn mixture)
2 cans of diced potatoes

Brown the ground beef and drain well. Add beef to crock pot.
Add the V8 Juice, beef broth and bag of frozen veggies.
Cook on low for 7-10 hours. The last half hour of cooking drain the canned potatoes and add to soup. Let cook for about 30 minutes longer.

That's it! Not only is it good for you, but it tastes great too. I like to serve it with warm corn bread. I also will sometimes change out the veggies and add green beans, can of kidney beans, okra, anything you might like. Since the V-8 and broth have salt you don't have to add any to the soup. You can always add it to each bowl if you like. I hope you all enjoy this recipe as much as my family does.

Enjoy!
Wendy
