Chicken, Wine & Artichokes

not so sure about the capers? but I'd add mushrooms & some chicken broth--so it's a bit saucier? newleafwellness.biz

2 pounds boneless skinless chicken breasts
1 can of artichokes (14oz), quartered & drained
1 can of diced tomatoes (14.5oz), undrained
Juice of 1 lemon
1/2 cup dry white wine
3-4 cloves of garlic, sliced or minced
1/4 cup butter
1 tablespoon capers (optional)
1 tablespoon corn starch

Place all ingredients EXCEPT corn starch in crockpot.
Cook on “low” setting for 4-6 hours, or until chicken is cooked through. Add corn starch & cook on “low” for additional 30 minutes or until sauce is desired thickness.
Serve over a bed of Angel Hair Pasta or sautéed spinach.

MN Mom:I am trying this!! .....it sounds delicious! Yes on the dark meat-I agree Thank you!

When my son was home on leave before deployment with the USS Eisenhower, we had a combined retirement,65th birthday, and Kids are home party.  I made this hotTurkey for sandwiches, and it disappeared.

HOT TURKEY SANDWICH

1 Turkey breast split in half (about 8 pounds)

1 package dry (lipton) soup mix

1 stick butter (chunked)

1 can beer

Put all ingredients in crock pot and cook on low for 8-9 hours  remove turkey and shred and put back in crock pot with the juice and serve on buns.

The only thing I would have done different was to add a couple turkey thighs or hind quarters to have some dark meat mixed in, and then maybe I would have had some for left overs.    It sure was good and easy.

I gotta try this!  Crock Pot Apple Butter??!  (makes 3 pint jars)  From www.food.com

  1. Place apples in slow cooker in thirds, layering sugar between each layer.
  2. Add rest of ingredients on top and pack down
  3. Cover & cook on high for 1 hour.
  4. Reduce heat to low. Give it a stir. Keep covered & cook 8 hours or until thick & dark-brown, stirring occasionally. (You can do this overnight, then finish it in the morn.)
  5. Uncover & cook for the last hour still on low.
  6. Puree in blender for a smoother apple butter.
  7. Place in sterile jars with lids & process for 10 minutes in hot water bath or you can freeze.
