carols kitchen - love your recipe for "potato" salad.  I wish I would have seen it to try for the weekend but I didn't.  I'll have to give this a try soon......especially since it's low carb!

MY food plan “potato” salad

Cauliflower “potato salad” awesome with bbq grilled picnic food!!

For a healthy spin on potato salad, try substituting potatoes with cauliflower.
Yield: 3 servings
Ingredients:
4 cups cauliflower florets
¼ cup diced red onion
½ cup diced celery
2 dill pickle spears, diced
3 Tbsp light mayonnaise
2 tsp Dijon mustard
2 tsp lemon juice
¼ tsp celery salt
¼ tsp ground black pepper
3 hard-boiled eggs, chopped into small pieces
Directions:
1. Bring a large pot of water to a boil. Place cauliflower florets into a steamer basket and set directly over water. Let steam for approximately 8-10 minutes or until tender.
2. Remove from heat and allow to cool. Pat florets dry with paper towels to get rid of excess liquid. Set aside.
3. Combine onion, celery, pickles, mayonnaise, mustard, lemon juice, celery salt, and pepper in a large bowl, and mix well.
4. Gently incorporate eggs and cauliflower into the mixture.
5. Cover and chill for two to three hours before serving.

I used some leftover chicken last night to make little buffalo slider sandwiches - they were delicious!

I'm not sure what's on our menu yet for the weekend.  I'm sure we'll be BBQ'ing at some point!

Samantha I like the chicken with roasted red peppers and another favorite is chicken taco soup.

Good Morning!

The Cilantro Lime chicken was a success! I’m so glad because we are eating it again tonight for left overs! I put my serving over a bed of romaine lettuce. It was so yummy. I did add Carrots, celery, tomatoes, and hominy to add some more veggies! My husband had two full servings! Lol

Now trying to think of Menu options for this weekend. What are y’all serving/making?

My son is a track & field/XC coach - this was his first year there coaching (and it's a volunteer position!).  He will be there for one more year (and then hopefully transition into a paying coaching position somewhere).

The chicken sounds delicious - let us know how it turns out!
