Making Tamales will be an all day process as she has never seen the whole process done, she usually just comes when it was time to put the tamales together. Pray for my patiences to hold up through this process.
When my mother was alive, one year my sister and I thought it was about time that someone wrote the family Tamale recipe down. So there we stood with our mother, measuring cups and spoons ready!. Every time mom started to throw something in the bowl or pot we would stop her, measure it and write it down. Needless to say by the end of the day mom had murder in her eyes. But we did get it written done. She passed away two years after that. I do miss her♥
Hope everyone has a wonderful holiday weekend.!
Well I got to talk with my son Eric and found some pictures on the USS Greenbay site from the marathon they had. It was good to see him. I hope everyone else had a chance to talk with their loved one. I wish them all good health.
Woohoo! Our family just had 48 minutes of hanging around the computer for a Skype call from Aaron! I don't know what the sailors have available, but the Marines have 'motomail'. If you have the equivalent (you send letter, it is printed and sealed in an envelope and delivered, unseen by anyone but your addressee), know that they aren't getting through right now. First the machine didn't work, now they are out of the special paper. :-(
Here is info he shared that might be useful to other moms as we all go about sending our love in boxes:
It is extremely hot. On land it is 120 with about 5% humidity; on board while on deck duty it's about 120 with 80% humidity but the inside is air conditioned and they have fans.
They are very bored.
Though you wouldn't think the temps would allow this, he requested the mint fudge I made previously (your basic choc chips with sweetened condensed milk recipe with mint extract).
Maybe this info will be helpful to other moms, too:
He said the mint fudge was a favorite with the guys, but he hoarded some of it as he loved it so much. Also the oatmeal/raisin/pecan went over very well with the other guys, and the oatmeal butterscotch would have...but he hoarded that, too.
(He shares some of everything)
I've made 3 different kinds of cookies using the basic cake mix recipe:
1 box of cake mix
2 eggs
1/2 cup cooking oil.
I make balls of the dough and place in cupcake papers just to bake, then remove them from the oven before they look totally done, and remove the papers as soon as they are not so hot as can't be handled. I have commercial ones that won't stick like the regular pastel kind. Can be purchased cheaply at Smart & Final/Cash & Carry/United Grocer's store chain. This helps them keep a uniform shape and depth. I remove and package them stacked on each other, maybe 8 to a 'roll' and put in ziplocks. THat way they stay fresh.
I used a chocolate one with some peanut butter playdough as centers. Those were dry and crumbly.
The strawberry mix dough wrapped around one small berry from strawberry preserve jar was a huge hit. All the guys loved them.
This last time I used a French Vanilla cake mix that I added orange extract to, plus some orange food color for interest, and threw in reconstituted dried cranberries. He just told me those were amazing and were so moist and fresh they were like just out of the oven!
It was so good to not just hear his voice, but to see the sparkle in his eyes. God bless each one of our sons, daughters and husbands as they serve our country so honorably. God bless each of us who serve by waiting, loving, mailing goodies!
