Salsa Meat Loaf

Aluminum foil strips
Vegetable cooking spray
2 lbs ground round ( I use ground turkey)
3 slices light bread, crumbled ( 1 cup)
1 cup chopped onion (about 1 medium)
1/2 cup fat-free egg substitute
1/4 tsp salt
1/4 tsp ground pepper
1/2 cup ketchup
1/2 cup thick and chunky salsa

Coat 3-1/2 quart slow cooker (mine is a 5 qt) with cooking spray. Tear off two lengths of aluminum foil long enough to fit in bottom of cooker and extend 3 inches over each side of cooker. Fold each foil strip lengthwise to form 2-inch-wide strips. Arrange foil strips in a cross fashion in cooker, pressing strips in bottom of cooker and extending ends over sides of cooker. Combine beef and next 5 ingredients, shape mixture into a loaf the shape of the slow cooker container. Place loaf in slow cooker over foil strips. (Foil strips become "handles" to remove meat loaf from slow cooker.) Make a shallow indention on top of meat loaf. Combine ketchup and salsa (chili sauce), pour over meat loaf. Cover and cook on low heat 8 hours or on high heat 3-1/2 to 4 hours. Use foil strips to lift meat loaf from cooker. Let meat loaf stand 10 minutes before serving.

Crockpot Chicken Noodle Soup Recipe

3 carrots, peeled and cut into chunks
3 stalks celery, cut into chunks
1 large onion, quartered
3 boneless skinless chicken breast halves
2 cans chicken broth-I use the Swansons Healthy Request, fat free
2 to 3 soup cans of water
a generous shake of dried dill and a generous shake of dried parsley
8 oz. noodles - I use the "No Yolks" brand broad noodles

Put vegetables in CP. Add chicken. Pour in broth and water. Add dill and parsley. Cover and cook on low 8 hours. Remove veggies and chicken from CP. Add noodles, turn to high and heat while you shred the chicken and mince the veggies. I run the veggies through the food processor. Return chicken and veggies to CP and heat through. It takes the noodles about 20 minute to cook. Serves about 6 hungry folks. I use a 5 qt CP for this. I also use frozen chicken breast right out of the freezer.
1 lb.Browned and drained ground beef
6 cans of chili beans (I use 3 light, 3 dark)
1 large can diced tomatoes
1 large can tomato puree
2 packets chili seasoning

Use 4qt. slow cooker. Add browned and drained ground beef. Add all other ingredients, stir well, cook for 6-8 hours on low.
Thanks Nita! I would like to try this recipe since my hubby has been hollering for some good chili. Made some in a pot over the stove recently but over did it a little on the chili seasoning but it was okay. I wasn't even following a recipe.
Thanks spitfire1958! I love chicken and dumplings!
Pot Roast

2lbs Chuck roast
1 onion (medium) cut into chunks
carrots
potatoes cut into chunks
salt &pepper to taste
1 envelope of beef gravy mix
1 cup of water

I use enough carrots and potatoes for each person. Salt and pepper meat. Put everything in the crockpot. Add gravy mix and water. Cook on low 8-10 hours. I use any left over meet for burritos or tacos.
My hubby always likes a good pot roast. I think that is the only meal he likes out of a crockpot. He likes plenty of veggies too! I never thought to add a gravy mix and I've always used the lipton onion soup mix. Thanks for sharing.

12 oz Kraft 2% Shredded Mozzarella Cheese
16 oz 1% low-fat cottage cheese

1/2 cup(s) PA Dutchman canned mushrooms

Spaghetti sauce in place of tomato sauce. 1/4 sauce in crockpot, then noodles, 1/3 of cottage cheese, mozz cheese. Repeat 2X. Low 4-5 hours or High 2 hours.

Number of Servings: 6

Potato Mess

5 lbs potatoes, peeled and diced
16 oz sour cream

Bacon bits (optional)
Butter
salt and pepper

Boil peeled potatoes, cool and dice. Put small slice of butter in bottom of crock, add 1/4 of cooked potatoes, salt, pepper, 1/4 sour cream, 1/4 shredded cheddar cheese and start layers over. End the final layer with shredded cheese. Keep cooker on low all day. This comes out tasting just like a baked potato and will feed a crowd of people.

Number of Servings: 12-16
Crockpot Italian Beef
Rump Roast
3 Beef Bullion cubes
3 cups water
1 tsp Oregeno Seeds
1 tsp Fennel Seeds
1 tsp Anise Seeds
1 tsp Sesame Seeds
1-2 Onions

Put water, bullion cubes, roast, oregeno, sesame, fennel seeds in crocpot and cook on low overnight. In the morning cut up the roast and add sliced onions and green peppers. Return to the pot on low for the rest of the day. I like to use sweet onions but it's up to you whatever you prefer. We serve this on onion buns from the bakery.
Sounds great & I bet it smells great too while it is cookin'! Thanks for sharing!
